Mexican Skillet Macaroni

This was sooo easy and so yummy. Seriously. My tummy did a little happy dance when I was eating it. In fact, it was so well liked it was scarfed before I could take a picture! I have some packed away for my lunch today at work and I'll see if I can take a snappie then. Make this and then let me know how you like it!! Really. Try it. heh

Mexican Skillet Macaroni

Adapted slightly from recipe at Fitness and Freebies

1/2 teaspoon olive oil
1 pound ground chicken breast, skinless
1/2 cup onions, chopped
1/2 cup bell peppers, chopped
15 ounces tomato sauce
4 cups water
One envelope taco seasoning mix
8 ounces macaroni, thin, uncooked
1/2 cup fat-free cheddar cheese, shredded

In a 12-inch skillet, heat oil over medium heat. Add chicken, onions, and bell peppers. Cook until chicken is no longer pink and vegetables are tender. Stir in tomato sauce, water, and seasoning mix. Bring to a boil. Add spaghetti. Reduced heat. Simmer covered until spaghetti is tender, 25 minutes. Sprinkle with cheese.

Recipe makes six servings.

Btw there is a new theme that will be running through my blog. Low calorie! I am edging toward a healthier diet as well but it's slow going. Right now I am focusing on low calorie. I've lost 40lbs since February and have a lot more I want to lose so this is my main focus in my cooking now.
