Well yesterday I wasnt feeling well at all so I wanted something quick and easy to have for dinner and I wanted to use up one of the big cans of chunk chicken breast that have been hidden in the back of my pantry for a year (what can I say I bought them back when I was the laziest cook ever). I found the perfect recipe. It's very quick to make and is really very good (even the leftovers heated up today were yummy). I served it with a simple green salad and the leftover mozzarella bread from the other day.
Ziti Chicken Casserole
2 cups ziti pasta
13 oz can chunk chicken breast
2 cup (8 oz pkg) muenster cheese, shredded
10.5 oz can cream of chicken soup
1 soup can of water
1 teaspoon of pepper
1/4 cup grated parmesan cheese
garlic cooking spray
1. In medium pot, cook ziti as directed on package and drain well.
2. Preheat oven to 350.
3. Spray a 2-quart casserole with garlic cooking spray.
4. In a large bowl, combine all ingredients except Parmesan cheese and spoon into the casserole dish. Top with Parmesan cheese.
4. Bake at 350 degrees for 30-35 minutes or until hot and bubbly.
My goodness someone needs to come give me lessons on how to take a decent picture! heh. I am definitely no professional!
